Description

BIO MISO Barley & Pea is an honest fermented miso paste inspired by Japanese tradition, but based on local ingredients – BIO barley and BIO peas . It is naturally fermented, unpasteurized and matured to obtain a full, harmonious taste with the typical fifth taste of umami .

The basis of this miso is barley , which gives the paste delicate malty notes, a fuller body and a pleasant depth of taste. In combination with peas, an original plant-based miso without soy is created, which is a great alternative to classic soy pastes. This type of miso is called mugi miso – that is, barley miso, where barley plays the main role in the resulting taste and character of the product.

Fermentation is carried out using the noble culture Aspergillus oryzae , also known as koji . This process creates a complex, naturally distinctive paste from simple ingredients with a rich aroma and umami flavor. The product is unpasteurized , therefore retaining its natural fermented character.

Miso also contains postbiotics , substances produced during fermentation by the activity of microorganisms. It is the fermentation and maturation that give the product its depth, natural flavor complexity, and differentiate it from common flavorings.

MISO Barley & Pea has a wide range of uses in the kitchen. It is suitable as a base for soups instead of broth, for flavoring and thickening sauces, in marinades, spreads, dressings, vegetable dishes, legumes, cereals and salads. A small amount is enough to enhance the taste and add natural saltiness and umami tones.
