INSTRUCTIONS
- 1.Preheat the oven to 175 °C and line a baking tray with baking paper.
- 2.In a large bowl, beat softened butter, brown sugar, honey and vanilla extract until light and fluffy.
- 3.Stir in the tsampa, baking soda and salt until well combined.
- 4.Stir in the dried fruit and chopped nuts.
- 5.Drop the cookie dough by spoonfuls onto the prepared baking sheet and flatten slightly with the back of a spoon.
- 6.Bake in preheated oven for 12-15 minutes, or until edges are golden brown.
- 7.Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

- 1/2 cup chopped nuts (almonds, walnuts or pecans)
