INSTRUCTIONS
1. Preheat the oven to 350°F (175°C) and line a baking sheet with baking paper.
2. In a large bowl, beat softened butter, brown sugar, honey and vanilla extract until light and fluffy.
3. Stir in the tsampa, baking soda and salt until well combined.
4. Stir in the dried fruit and chopped nuts.
5. Drop the cookie dough by spoonfuls onto the prepared baking sheet and flatten slightly with the back of a spoon.
6. Bake in preheated oven for 12-15 minutes, or until edges are golden brown.
7. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

1/2 cup chopped nuts (such as almonds, walnuts or pecans)
