1.Cook the barley noodles according to the instructions on the package (usually about 8–10 minutes). Once cooked, drain them, rinse with cold water and let them cool.
2.Prepare the vegetables: Cut the bell pepper into small cubes, the cucumber into half rings or cubes. Cut the onion into thin strips (if it is too sharp, you can briefly soak it in lemon juice). Crumble or cut the feta into small pieces.
3.Mix all ingredients in a large bowl – cooled noodles, vegetables, cheese and optionally arugula.
