COLD SALAD WITH BARLEY NOODLES AND FETA CHEESE

A light and nutritious salad that combines the traditional taste of barley pasta with the freshness of seasonal vegetables and the saltiness of feta cheese. Thanks to the barley noodles, the salad has a slightly nutty taste and a higher fiber content, so it will keep you full for longer. INSTRUCTIONS

  • 1.Cook the barley noodles according to the instructions on the package (usually about 8–10 minutes). Once cooked, drain them, rinse with cold water and let them cool.
  • 2.Prepare the vegetables: Cut the bell pepper into small cubes, the cucumber into half rings or cubes. Cut the onion into thin strips (if it is too sharp, you can briefly soak it in lemon juice). Crumble or cut the feta into small pieces.
  • 3.Mix all ingredients in a large bowl – cooled noodles, vegetables, cheese and optionally arugula.

  • 150 g barley noodles
  • 1/2 red pepper
  • 1/2 cucumber (salad or snakehead)
  • 1 small red onion (or spring onion)
  • handful of arugula or wild spinach (optional)
  • 100 g feta or Balkan-type cheese
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice or apple cider vinegar
  • salt, pepper
  • a pinch of dried oregano or thyme
