Barley cake

Barley cake is a nutritious and delicious dessert that combines the delicate nutty flavor of barley flour with the light sweetness of fruit and cinnamon. The barley flour makes the cake not only tasty, but also rich in fiber and nutrients, making it a healthier alternative to regular sweet pastries. Roasted fruits, such as apples or pears, give the cake a pleasant juiciness and freshness. This cake is ideal for lovers of healthier sweets and great as a quick dessert or sweet breakfast.

INSTRUCTIONS

  • 1.Preheat the oven to 180°C and grease the mold with butter or line it with baking paper.
  • 2.Melt the butter or oil and let cool slightly.
  • 3.In a bowl, mix the dry ingredients: barley flour, baking powder, baking soda, cinnamon, and sugar.
  • 4.In another bowl, beat the eggs and add the melted butter (or oil), vanilla extract, and milk. Mix well to combine.
  • 5.Gradually add the wet ingredients to the dry mixture and mix until smooth.
  • 6.Cut the fruit into smaller pieces and gently fold them into the batter. For example, if you are using apples, you can lightly fry them in a pan with a little butter and cinnamon for more flavor before adding them to the batter.
  • 7.Pour the batter into the prepared pan and spread evenly.
  • 8.Bake in the preheated oven for about 30–40 minutes, or until the cake is golden brown and a skewer inserted into the centre of the cake comes out clean.
  • 9.If you like, sprinkle the cake with sugar (or cinnamon) just before baking for a crispy finish.
  • 10.Let the cake cool and then remove it from the pan.

INGREDIENTS

  • 200 g barley flour
  • 100 g powdered sugar (you can also use cane sugar)
  • 100 g butter (or vegetable oil if you want a vegan version)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 100 ml milk (or plant-based drink if you want a vegan version)
  • Fruit to taste (e.g. apples, pears or berries)
