INSTRUCTIONS
- 1.Preheat the oven to 180°C and grease the mold with butter or line it with baking paper.
- 2.Melt the butter or oil and let cool slightly.
- 3.In a bowl, mix the dry ingredients: barley flour, baking powder, baking soda, cinnamon, and sugar.
- 4.In another bowl, beat the eggs and add the melted butter (or oil), vanilla extract, and milk. Mix well to combine.
- 5.Gradually add the wet ingredients to the dry mixture and mix until smooth.
- 6.Cut the fruit into smaller pieces and gently fold them into the batter. For example, if you are using apples, you can lightly fry them in a pan with a little butter and cinnamon for more flavor before adding them to the batter.
- 7.Pour the batter into the prepared pan and spread evenly.
- 8.Bake in the preheated oven for about 30–40 minutes, or until the cake is golden brown and a skewer inserted into the centre of the cake comes out clean.
- 9.If you like, sprinkle the cake with sugar (or cinnamon) just before baking for a crispy finish.
- 10.Let the cake cool and then remove it from the pan.

- 100 g butter (or vegetable oil if you want a vegan version)
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder

- 1/2 teaspoon ground cinnamon
- 100 ml milk (or plant-based drink if you want a vegan version)
- Fruit to taste (e.g. apples, pears or berries)
