BARLEY ICE CREAM

INSTRUCTIONS

  • 1.Prepare the bananas: Cut ripe bananas into rounds and freeze for at least 4 hours (or overnight).
  • 2.Blend: In a high-powered blender, combine the frozen bananas, barley powder, lime juice, and a splash of coconut milk. Blend until you have a creamy, smooth ice cream-like consistency. If the mixture is too thick, add a little more milk.

INGREDIENTS

  • 2–3 ripe bananas, frozen (sliced)
  • 1–2 teaspoons of young barley powder
  • 1 teaspoon lime or lemon juice (optional – adds freshness)
  • 2 tablespoons coconut milk or other plant-based milk
  • Optional: a few mint leaves, a pinch of vanilla or honey to taste
