BARLEY FLOUR BISCUITS

INSTRUCTIONS

  • 1.Preheat the oven to 180 °C. Prepare a baking sheet with baking paper.
  • 2.In a bowl, mix the barley flour, flakes, baking powder, cinnamon, and a pinch of salt.
  • 3.In another bowl, melt the butter and mix it with the honey. Add the egg and mix until smooth.
  • 4.Combine both mixtures together - you will have a soft dough. Finally, mix in the chopped nuts and other goodies (raisins, chocolate...).
  • 5.Using a spoon or your hands, form small loaves and place them on a baking sheet (they will spread a little, leave space between them).
  • 6.Bake for 10-12 minutes, until they start to turn golden brown around the edges and remain soft inside.
  • 7.Let them cool on the baking sheet for a while, then transfer them to a wire rack.

INGREDIENTS

  • 150 g barley flour
  • 50 g fine barley flakes (you can replace with other flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (optional)
  • pinch of salt
  • 70 g butter (or coconut fat)
  • 3–4 tablespoons honey (or maple syrup)
  • 1 egg
  • 50 g chopped nuts (walnuts, hazelnuts or almonds)
