INSTRUCTIONS
- 1.Preheat the oven to 180 °C. Prepare a baking sheet with baking paper.
- 2.In a bowl, mix the barley flour, flakes, baking powder, cinnamon, and a pinch of salt.
- 3.In another bowl, melt the butter and mix it with the honey. Add the egg and mix until smooth.
- 4.Combine both mixtures together - you will have a soft dough. Finally, mix in the chopped nuts and other goodies (raisins, chocolate...).
- 5.Using a spoon or your hands, form small loaves and place them on a baking sheet (they will spread a little, leave space between them).
- 6.Bake for 10-12 minutes, until they start to turn golden brown around the edges and remain soft inside.
- 7.Let them cool on the baking sheet for a while, then transfer them to a wire rack.

- 150 g barley flour
- 50 g fine barley flakes (you can replace with other flour)
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon (optional)
- pinch of salt
- 70 g butter (or coconut fat)
- 3–4 tablespoons honey (or maple syrup)
- 1 egg
- 50 g chopped nuts (walnuts, hazelnuts or almonds)
