Ham and barley noodle fritters

A traditional Czech baked dish in a more modern guise – classic ham fritters made with barley noodles, which gives them a slightly nutty flavor and higher nutritional value. A mixture of smoked meat, fried onions and boiled noodles is covered in an egg-milk sauce and baked until golden brown. The result is a rich, fragrant and perfectly combined dish that will delight lovers of home cooking and those looking for something a little healthier than the classic wheat pasta.

INSTRUCTIONS

  • 1.Cook the barley noodles. Drain and set aside.
  • 2.Prepare the mixture: In a pan, fry the chopped onion in a little oil until golden brown. Add the diced smoked meat and fry briefly to heat through and release the aroma.
  • 3.Mix the noodles with the meat and onion in a bowl.
  • 4.In another bowl, beat the eggs with milk, salt and pepper.
  • 5.Grease a baking dish (or baking dish) with butter and sprinkle with breadcrumbs, if desired.
  • 6.Pour the mixture into the baking dish, pour over the egg-milk mixture. You can stir lightly to spread it evenly.
  • 7.Bake in the oven at 180°C for about 30–35 minutes, until the surface is firm and golden.

  • 250 g barley noodles (wide or short)
  • 200–300 g smoked meat (ham, smoked pork, sausage, etc.)
  • 1 medium onion
  • 3 eggs
  • 200 ml milk (can also be cream or a combination)
  • Salt, pepper
  • Butter or oil for greasing the mold
