Tsampa biscuits

Tsampa, also known as roasted barley flour, is a staple food in Tibet and other areas of the Himalayas. It is often used to prepare simple and nutritious dishes that are both sweet and savoury.

INSTRUCTIONS

  • 1.Preheat the oven to 350°F (175°C) and line a baking sheet with baking paper.
  • 2.In a large bowl, beat softened butter, brown sugar, honey and vanilla extract until light and fluffy.
  • 3.Stir in the tsampa, baking soda and salt until well combined.
  • 4.Stir in the dried fruit and chopped nuts.
  • 5.Drop the cookie dough by spoonfuls onto the prepared baking sheet and flatten slightly with the back of a spoon.
  • 6.Bake in preheated oven for 12-15 minutes, or until edges are golden brown.
  • 7.Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  • 1 cup of tsampa
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dried fruit (such as raisins, chopped dates or currants)
  • 1/2 cup chopped nuts (such as almonds, walnuts or pecans)
