  • 1.In a saucepan, bring water or milk to the boil.
  • 2.Slowly add the tsampa, stirring constantly to avoid lumps.
  • 3.Reduce the heat to low and cook for about 5 minutes, stirring frequently, until the mixture thickens to a mushy consistency.
  • 4.Stir in the honey and a pinch of salt.
  • 5.Serve hot and sprinkle with grated cheese. Sweet honey and salty cheese create a delicious contrast of flavours in this soothing tsampa porridge.
