Banana bread with tsampa

Banana bread is a type of sweet bread made from mashed bananas. Often it is a moist and sweet quick bread. We’ll show you how to make one from Tsampa. Also known as roasted barley flour, tsampa is a staple food in Tibet and other areas of the Himalayas. It is often used to prepare simple and nutritious dishes that are both sweet and savoury.

INSTRUCTIONS

  • 1.Preheat the oven to 180 °C and grease the loaf tin.
  • 2.In a large bowl, mix the mashed bananas, tsampa, spelt flour, sugar, vegetable oil, baking powder, baking soda, salt, cinnamon, nutmeg and chopped nuts (if using). Stir until well combined.
  • 3.Pour the batter into the greased tin and smooth the surface.
  • 4.Bake in preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  • 5.Remove from the oven and let the banana bread cool on the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • 6.Slice and serve this delicious and healthy tsampa banana bread as a sweet treat for breakfast or dessert!

  • 2 ripe bananas, mashed
  • 1/2 cup tsampa
  • 1/2 cup spelt flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped nuts (such as walnuts or almonds), optional
