Banana bread is a type of sweet bread made from mashed bananas. Often it is a moist and sweet quick bread. We’ll show you how to make one from Tsampa. Also known as roasted barley flour, tsampa is a staple food in Tibet and other areas of the Himalayas. It is often used to prepare simple and nutritious dishes that are both sweet and savoury.
1.Preheat the oven to 180 °C and grease the loaf tin.
2.In a large bowl, mix the mashed bananas, tsampa, spelt flour, sugar, vegetable oil, baking powder, baking soda, salt, cinnamon, nutmeg and chopped nuts (if using). Stir until well combined.
3.Pour the batter into the greased tin and smooth the surface.
4.Bake in preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
5.Remove from the oven and let the banana bread cool on the pan for about 10 minutes, then transfer to a wire rack to cool completely.
6.Slice and serve this delicious and healthy tsampa banana bread as a sweet treat for breakfast or dessert!
